Try this recipe...

if you get it to work, it is WONDERFUL! I think my friends and I are failing in the carmel making portion!

BUTTER PECAN TURTLE BARS

CRUST
2 cups all-purpose flour
3/4 cup packed light brown sugar
½ cup butter, softened
2 cups pecan halves, coarsely chopped

CARAMEL
3/4 cup packed light brown sugar
1 cup butter

TOPPING
2 cups milk chocolate chips (approx. a 11.5 oz. bag)
(standard semi-sweet chips should work, too)

Combine flour, 3/4 cup brown sugar and ½ cup butter. Blend until crumbly. Pat firmly onto bottom of ungreased 9 x 13-inch pan. Sprinkle pecan halves over unbaked crust. Set aside.

In small saucepan, combine caramel ingredients - brown sugar and butter. Cook over medium heat, stirring constantly, until mixture begins to boil. Boil for one minute, stirring constantly. Drizzle caramel over pecans and crust. Bake at 350 degrees for 18-20 minutes or until caramel layer is bubbly and crust is light brown. Remove from oven and immediately sprinkle with chocolate chips. Spread chips evenly as they melt. Cool completely before cutting.

NOTE: After sprinkling on the chocolate chips, I turned off the oven and put the pan back in for 1 minute to speed up melting.

What's going wrong with your caramel? One minute doesn't seem like a very long time to boil it. Another thought is that the moisture in the air is affecting the finished product. I don't actually buy into that theory, though, because I just made fudge for the first time, on a very rainy day, and it turned out fine.

BTW -- you should totally make some thrummed mitts. Use some of the fiber you've already got and it will be extra stash-busting!

I failed miserably the only time I tried to make caramel. So I'm a jarred sauce girl now!
